This article calls for dried fava beans but you can easily use fresh, green fava beans if you have them on hand. Just shell the fresh ones so that you have about one pound of the beans and proceed with the recipe. No need to soak fresh ones.
Greek Style Fava Beans With Lemon (Koukia Lemonata) Recipe Ingredients:
- 1 pound dried fava beans, soaked overnight
- 2/3 cup Greek olive oil
- 1 medium onion, chopped
- 2 garlic cloves, chopped
- 1 cup chopped, fresh mint or parsley
- 2 teaspoons dried oregano
- Salt, to taste
- Pepper, to taste
- Juice of 2 lemons
Directions to Prepare Fava Beans With Lemon:
Rinse the beans in a colander and add to a saucepan. Cover with water, bring the water to a boil over high heat, and simmer them for ten minutes. Drain in a colander again and rinse with cold water. Return the beans to the pot, cover then with cold water, and bring it to a boil again over high heat, and then simmer them on low for 50 minutes or until the beans are tender. Strain them through the colander and rinse them with cold water.
Pour the oil into a skillet and set the heat to medium. Add the onions and saute for five minutes or until soft. Stir in the garlic and saute for another minute and then stir in the beans. Saute together for about 3-5 minutes so the flavors meld together. Stir in the mint or parsley. oregano, salt, pepper, and lemon juice. Simmer all the ingredients together on low for about five minutes so that the flavors meld together. Remove from the heat and serve immediately or refrigerate to serve later on.
